New York State Fair Syracuse

About 35 minutes from Skaneateles, the Great New York State Fair takes over the NYS Fairgrounds in Syracuse every August. It runs for 13 days, from late August through Labor Day. And with close to a million visitors each year, it’s one of the biggest events in the entire state — not to mention one of the oldest fairs in the country, having run continuously since 1841.

The scale of it is genuinely impressive. Over 100 food and drink vendors. More than 50 rides on the Midway. Daily free concerts at two main stages — Chevy Court and Suburban Park — featuring national artists included in the price of admission. Past performers have included Bon Jovi, Bruno Mars, Rod Stewart, Lynyrd Skynyrd, and Lainey Wilson. The 2026 lineup features ZZ Top, The Commodores, Sean Paul, and Ashanti, among others still to be announced. Furthermore, cultural villages celebrating Asian, Iroquois, Pan-African, and Latino heritage add real depth and diversity to the experience throughout the run.

The Food, the Fair, and the Famous 25¢ Milk

Agriculture sits at the heart of everything here. The Dairy Cow Live Birthing Center is a genuine highlight — a one-of-a-kind experience where visitors watch calves being born, meet the farmers, and learn about New York’s dairy industry. The famous Dairy Products Building serves cold white or chocolate milk for just 25 cents a cup. The annual butter sculpture — crafted from 800 pounds of New York butter — is a tradition that never gets old. Additionally, the Taste NY Pop-Up Market showcases over 300 products from 80 producers across the state, from Finger Lakes wines and ciders to Adirondack preserves and Hudson Valley artisan foods.

The food scene beyond that is equally compelling. The Fair is known for its outrageous annual creations — deep-fried everything, wild hybrid dishes, and drinks that defy description. It’s worth arriving hungry and budgeting accordingly.

Admission is just $8 per adult and includes all ground entertainment and concerts. Children 12 and under and adults 65 and over get in free.
